Κόλλυβα — Koliva (Memorial Wheat Dish)
Koliva is one of the most ancient foods in Orthodox Christianity, prepared for memorial services
and Soul Saturdays. Boiled wheat berries dressed with pomegranate, nuts, and powdered sugar,
symbolizing death and resurrection. This is both a ritual food and a genuinely nourishing dish.

TIME: 1 hour 30 minutes (plus soaking)
INGREDIENTS:
- 500 g whole wheat berries, soaked overnight
- 150 g walnuts, coarsely chopped
- 100 g blanched almonds, coarsely chopped
- 100 g golden raisins
- 100 g pomegranate seeds
- 80 g toasted sesame seeds
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground cloves
- Pinch of ground nutmeg
- 200 g powdered (icing) sugar, sifted
- 100 g fine breadcrumbs, toasted in a dry pan until golden
- Fresh flat-leaf parsley, finely chopped (about 3 tablespoons)
- Pinch of salt
For decoration:
- Extra powdered sugar
- Blanched whole almonds
- Silver dragees or Jordan almonds (optional)
METHOD:
1. Drain soaked wheat berries. Place in a large pot, cover with fresh water by 5 cm, add a pinch of salt. Bring to a boil, reduce heat, and simmer for 60-90 minutes until tender but not mushy. Drain thoroughly.
2. Spread wheat on a clean towel or paper towels and pat dry. The wheat must be as dry as possible — excess moisture will dissolve the powdered sugar.
3. Soak raisins in warm water for 15 minutes, drain well.
4. In a large bowl, combine wheat berries, walnuts, almonds, raisins, pomegranate seeds, sesame seeds, cinnamon, cloves, nutmeg, parsley, and toasted breadcrumbs. Toss gently.
5. Add powdered sugar and fold in gently until evenly distributed.
6. Mound the koliva on a large platter, shaping it into a smooth dome.
7. Sift a thick, even layer of powdered sugar over the top to cover completely. Decorate with almonds and a cross pattern if desired.
8. Serve at room temperature.
NOTES:
- Drying the wheat thoroughly is the most important step. Wet wheat turns the sugar into a sticky mess.
- The toasted breadcrumbs absorb excess moisture and add a subtle nuttiness.
- Koliva is deeply symbolic: wheat represents resurrection, pomegranate represents life, sugar represents the sweetness of the Kingdom.
- Store leftovers in the fridge. It keeps for several days but is best served at room temperature.
