Russian Non Fasting
Non-Fasting Recipe: This dish contains meat, dairy, or eggs and is intended for feast days and non-fasting periods.

Named for the Stroganov family in the 19th century, this dish of tender beef strips in a creamy mushroom
and mustard sauce is one of Russia's great contributions to world cuisine. Served traditionally over
buttered egg noodles or matchstick fried potatoes. Simple, fast, and elegant.

INGREDIENTS:
- 600 g beef tenderloin or sirloin, sliced against the grain into 5 mm strips
- 400 g mushrooms (cremini or white button), sliced
- 2 medium onions, halved and thinly sliced
- 3 tablespoons butter
- 2 tablespoons vegetable oil
- 2 tablespoons all-purpose flour
- 250 ml beef broth
- 250 g sour cream, full fat
- 2 tablespoons Dijon mustard
- 1 tablespoon tomato paste
- Salt and black pepper to taste
- Fresh dill or parsley, chopped, for serving
- Buttered egg noodles or fried shoestring potatoes, for serving

METHOD:
1. Pat beef dry and season with salt and pepper. Heat 1 tablespoon butter and 1 tablespoon oil in a large skillet over high heat. Sear beef in batches, 1 minute per side — do not overcook. Remove to a plate.
2. Lower heat to medium. Add remaining butter and oil. Cook onions for 5 minutes until softened.
3. Add mushrooms, increase heat to medium-high, and cook until mushrooms are browned and liquid has evaporated, about 8 minutes.
4. Sprinkle flour over mushrooms and cook 1 minute, stirring.
5. Stir in tomato paste, then pour in beef broth, whisking until smooth. Simmer until thickened, about 3 minutes.
6. Reduce heat to low. Whisk in sour cream and mustard. Do not boil once sour cream is added.
7. Return beef (and any accumulated juices) to the pan. Warm through for 2 minutes. Taste and adjust salt and pepper.
8. Serve over buttered egg noodles, topped with fresh dill.

NOTES:
- Do not overcook the beef. It should be pink inside when returned to the sauce; it will finish cooking in the warm sauce.
- Full-fat sour cream will not curdle if you keep the heat low. Stir it in off the heat if nervous.
- Classical Russian stroganoff is served over matchstick potatoes (соломка) rather than noodles. Both are traditional.
- If your sour cream is thin, stir in 1 tablespoon of flour before adding it to stabilise.
