Greek Fast With Fish

Sardines are one of the most underappreciated fish in the world — inexpensive, sustainable, extraordinarily nutritious, and deeply flavorful when treated properly. This open-faced toast layers grilled or tinned sardines over crushed ripe tomatoes on good bread, scattered with capers and a shower of parsley. It is a meal that takes five minutes and delivers more omega-3s than almost anything else you could eat.

In Greek island cooking, sardines are a staple of fish days. This preparation honors that simplicity.

INGREDIENTS

- 2 tins good-quality sardines in olive oil (about 120g each), or 8 fresh sardines, cleaned and grilled
- 4 thick slices crusty sourdough bread, toasted
- 2 ripe tomatoes, halved and grated on a box grater (discard skins)
- 2 tablespoons capers, drained
- 1 small red onion, sliced paper-thin
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- Flaky sea salt and black pepper
- Fresh flat-leaf parsley, chopped
- Pinch of dried oregano

METHOD

1. Toast the bread until golden and firm. Rub each slice lightly with a cut clove of garlic if desired.

2. Spoon the grated tomato pulp generously over each toast. Season with salt and a drizzle of olive oil.

3. Arrange the sardines over the tomato — two or three per toast, depending on size. If using tinned sardines, drain lightly but do not rinse them.

4. Scatter the capers and thin red onion slices over the sardines. Drizzle with olive oil and red wine vinegar. Finish with parsley, oregano, and cracked black pepper.

NOTES

- Good tinned sardines are a legitimate ingredient, not a compromise. Look for sardines packed in olive oil from Portugal, Spain, or Morocco.
- If using fresh sardines, grill them over high heat for 2-3 minutes per side. They should be slightly charred.
- The grated tomato technique (pan con tomate style) gives you silky tomato pulp without chunks. It is superior to slicing for this application.
- This is an excellent light lunch on Annunciation or Palm Sunday alongside a simple salad.
