Georgian Lobio Without Oil
Lobio is the soul of Georgian cooking — red kidney beans simmered with an extraordinary amount of fresh herbs, garlic, and crushed walnuts. The walnuts are the key to making this work without oil. They provide all the richness and body the dish needs, and they are entirely fasting-compliant. Georgian monasteries have served lobio during Lent for as long as there have been Georgian monasteries.
The herb mixture is non-negotiable: cilantro, blue fenugreek (utskho suneli), and marigold petals (imeruli shaphrani) are the Georgian trinity. If you cannot find the specialty spices, increase the cilantro and add a pinch of regular fenugreek.

INGREDIENTS
- 2 cups dried red kidney beans, soaked overnight and drained
- 1 large onion, finely diced
- 4 cloves garlic, minced or pounded in a mortar
- 1 cup walnuts, finely chopped or pounded
- 1 cup fresh cilantro, finely chopped (stems and leaves)
- 1 teaspoon blue fenugreek (utskho suneli) or 1/2 teaspoon regular ground fenugreek
- 1 teaspoon ground coriander
- 1/2 teaspoon dried marigold petals (imeruli shaphrani) or 1/4 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 tablespoon red wine vinegar
- Salt and black pepper to taste
- Fresh pomegranate seeds, for serving (optional)
METHOD
1. Place the drained beans in a large pot, cover with water by 5cm. Bring to a boil, then reduce to a simmer and cook for 45-55 minutes until completely tender. Do not drain — you will use the cooking liquid.
2. Mash about a third of the beans in the pot with a fork or potato masher, leaving the rest whole. This creates the thick, stew-like consistency that defines lobio.
3. Add the onion to the pot and simmer for 10 minutes until it softens in the bean broth.
4. Add the garlic, walnuts, cilantro, fenugreek, coriander, marigold, and cayenne. Stir well and cook for another 5 minutes. The walnuts will thicken the broth and release their oils.
5. Stir in the red wine vinegar. Season generously with salt and pepper. Serve warm or at room temperature, scattered with pomegranate seeds if available.
NOTES
- The walnuts are structural, not decorative. They replace oil by providing fat and body. Do not reduce the amount.
- Blue fenugreek (utskho suneli) is available at Georgian or specialty spice shops, and online. It has a sweet, nutty, slightly bitter flavor that regular fenugreek only approximates.
- Lobio is traditionally served with mchadi (Georgian cornbread) or regular bread.
- This is better on the second day. Let it sit in the refrigerator overnight and bring to room temperature before serving.
